Has every serving of vegetables that you need, may not be on the light side of calories, but considering the vegetable intake, it is well worth it. Ingredients

    6 cups assorted cut-up fresh vegetables.*
    2 cups rotini pasta cooked and drained
    1 cup Italian salad dressing**
    1 cup (4oz.) Shredded Colby and Monterey Jack Cheese

    Lettuce leaves and chopped tomatoes, optional

    *See previous list of vegetables, or add your own favorites.
    ** Can substitute for light or fat free.

Directions

COMBINE vegetables, rotini and salad dressing in a large salad bowl.
COVER; chill several hours.
TOSS salad with cheese just before serving. Serve on lettuce with chopped tomatoes if desired.

Makes 6 1.5 cup servings. (approximately)
