Introduction

This is a very easy and low-calorie alternative to an average breakfast burrito. This is a very easy and low-calorie alternative to an average breakfast burrito.

Ingredients

    1 small onion, diced
    1/3 c. egg beaters (regular or southwestern)
    1/4 c. skim milk or soymilk
    1 T. green chili peppers
    1/4 c. 1% milkfat cottage cheese
    1 large La Tortilla wrap or other low-carb tortilla.
    2 T. salsa (optional)
    Salt and pepper to taste

Directions

Cook the onions in a frying pan sprayed with nonfat cooking spray over medium high heat until browned; about 5 minutes.
Beat the egg beaters and milk in a small bowl until frothy. Add to the onion mixture. Add the green chili peppers. Cook over medium heat, stirring until desired egg consistency is reached. Turn off the heat and add cottage cheese. Stir until cheese is melted. Spread the eggs on the tortilla and wrap burrito-style. Serve with salsa on the side, salt and pepper to taste, and enjoy!

Makes 1 single-serving burrito.
