Introduction

This is a staple in my refrigerator! I cook it on the weekends and eat leftovers all week. This is a staple in my refrigerator! I cook it on the weekends and eat leftovers all week.

Ingredients

    1 lb. ground turkey breast meat, browned and drained

    3 16-oz cans of your choice of beans. I like black, pinto and kidney (but kidney are often packed in sugar--read your labels!)

    1 28 or 32-oz can tomato sauce

    1 16-oz can diced tomatoes

    (optional) Add a can of diced chilis, your favorite salsa, or a can of sweet corn (without the water)

    1 tbsp chili powder

    1/2 tbsp cumin

    Serve with (optional): Sour cream, cheddar cheese, diced onions, crackers or your favorite crusty bread

Directions

Rinse beans well in tepid water. Mix all ingredients in slow cooker and cook on high for 3-4 hours or low for 6-8 hours. Stir occassionally.

Makes 12 1-cup servings.
