* Chicken Breast, no skin, 4 unit (yield from 1 lb ready-to-cook
* Prunes, dried, .5 cup, pitted
* Apricots, dried, .5 cup, halves
* *Yams, 1 cup, cubes
* Olive Oil, 2 tbsp
* *Balsamic Vinegar, 1 tbsp
* *Lemon Juice, .5 cup
* Brown Sugar, 2 T. unpacked
* Brown Sugar, 1 T. packed
* Oregano, dried 2 tsp.
Salt, to taste
Directions
Put chicken, dried fruits and yam in casserole.
Combine other ingredients, then pour over chicken mixture. Cover and marinate for at least 3 hours.
Preheat oven to 375.
Bake covered for 60 to 75 minutes.

DIETINGAL
I'm sorry, I really wanted to like this because it seems so healthy, but the oregano over-powered the rest of the dish completely. Also-when everything else is done cooking the sweet potatoes still need cooking time. I would not make this again. - 2/18/09

I'm SO sorry- the amount of oregano should be 2 teaspoons , not 2 tablespoons. I increased the time from 45 to 60 to 60 to 75.
