Introduction

Number of Servings: 4

Ingredients

    1t orange zest plus 1/4 C orange juice
    1/4 C lite soy sauce
    1/4 C rice vinegar
    1 T Cornstarch
    2 t olive oil
    1 lb pork tenderloin, quartered lengthwise and thinly sliced
    2 garlic cloves, minced
    3 scallions, white and green part separated and thinly sliced
    1 head broccoli, about 1 lb, cut into bite size florets, stalks peeled and thinly sliced

Directions

In bowl, combine zest, juice, soy sauce, vinegar and cornstarch. Set aside

In large nonstick skillet, heat 1 t oil over medium. Working in batches, cook pork until browned on 1 side, 1-2 min. (Pork will cook more in step 4.)

Add remaining oil, garlic and scallion whites. Cook, stirring occasionally until scallions start to wilt, 1-2 min. Add broccoli and 1/2 C water. Cover and cook until broccoli is crisp-tender and water has evaporated, 2-4 min.

Add pork (and any accumulated juices) and stir fry sauce to pan. Cook, stirring until pork is cooked through and sauce has thickened, 1-2 minutes. Top with scallion greens.
