Ingredients

    2 - 15.8 oz cans great northern beans, drained
    1 - 10 oz can Ro-tel Original Diced Tomatoes and Green Chilies
    1 cup onion diced
    1 cup tomato diced
    1 clove garlic chopped
    2 Tbsp olive oil
    Cilantro for garnish

Directions

Heat olive oil in medium sauce pan. Add onion and sautee until transparent. Add garlic, beans, Ro-tel and tomato. Simmer 15 minutes. Garnish with Cilantro. Makes 6 1 cup servings

    So quick and easy... great flavor for such an easy dish. Easy to make any night of the week in a hurry. Directions say makes 6 servings - nutritional info says 8. Not sure if nutritional info is correct. - 5/12/09

    Very Good
    I simplify it by just heating up the black beans with salsa, but it's the same basic idea. I then pour it over my eggs in the morning. Very good! - 3/9/11

    Incredible!
    Used sweet onion flavored diced tomatoes, extra garlic and the flavors were great! I was surprised at how simple yet delicious this dish is. - 7/11/09

    Looks good. We don't like green chiles so I'm going with Italian-style tomatoes and will top with basil instead of cilantro. - 6/30/09
