Easy Mexican chicken that can be modified in spice to your tastes. Bakes in the oven or slow cooker. Wonderful served over brown rice and topped with cheddar cheese and sour cream! Ingredients

    *4 Boneless, Skinless Chicken Breast, (4.8 oz. each)
    * 16 oz jar Salsa (mild or hot, per taste)
    * 1 medium Onion sliced
    * Bell pepper, 1 cup, strips
    * 1/2 cup Chicken Broth, low sodium
    * Cumin
    * Garlic powder
    * Chili powder
    * 3 cups cooked brown rice
    * 4 oz. shredded low fat cheddar cheese
    * 6 TBS light sour cream

Directions

Makes 6 servings.

Preheat oven to 350 degrees.

Place chicken in casserole dish. Sprinkle with cumin, garlic and chili powders.

Top with onions and peppers. Add chicken broth then spoon salsa over the top.

Cover and bake in preheated oven at 350 degrees for an hour or until chicken is very tender. Shred chicken and serve over brown rice, top with low fat shredded cheddar cheese and low fat sour cream.

Can also be cooked in crock pot.
