Introduction

One serving makes three cakes which is usually enough for a small meal. One serving makes three cakes which is usually enough for a small meal.

Ingredients

    1 medium potato
    handful of spinach
    1/8 of a medium onion
    1/3 cup grated cheddar cheese

Directions

1. Dice and cook potato, I usually steam but I'm sure boiling will have the same result. They're done when you can poke them with something and they are soft.
2. A minute or two before the potato is done cook the spinach, I usually just put them on the potato to steam.
3. Put all the ingredients together (leave a little bit of cheddar out) and mash.
4. Make little balls out of the mash, I usually make three from one potato.
5. Sprinkle the cheddar that is left on top.
6. Cook on gas mark 4 for 20-25 minutes, or until the cheese is golden.

I like cherry tomatoes on the side
