Introduction
Tasty high protein main dish. I guess it's like a casserole. It's not a very "pretty" dish, but it's a tasty one. My hubby likes this and he's not a vegetarian.*It has a good amount of oil, so watch those portions. With the eggs, nuts, and cottage cheese, it's an excellent source of protein. Ingredients

5 1/2 cups Special K cereal, original
2 packets of G.Washington Broth mix
1/2 cup Smart Balance Oil
1/2 Large Onion, Raw
1/2 cup of chopped walnuts (i like a little more)
4 eggs or 1/2 cup egg beaters, original
1/2 cup milk, skim
16oz container of cottage cheese, 1% Lowfat
Directions
Prep heat oven to 350 degrees
Mix all ingredients in a big bowl in any order...I usually start with the drier ingredients and work toward the wet ones, but it doesn't really matter. Mix ingredients until evenly incorporated.
Pour into a 9X9 baking dish (use non-stick at your own discretion, I don't). Smooth out evenly and place in 350 degree oven for approx 40-45 mins. I like to bake it until it's crispy on the edges. The crispy bits taste delicious :-).
Let cook for 10 minutes and serve.
In Hawaii we like to eat it with a side of brown rice, but you could eat it with a side of steamed veggies.
