Introduction
I have taken this "snack" recipe and made it into a light meal full of protein! If you're only having a snack, this recipe makes 4 servings. But for a light lunch (with the same ingredients) I can have 2 servings.The photo shows 1/2 of the recipe. I have taken this "snack" recipe and made it into a light meal full of protein! Ingredients

1 can of 12.5 oz. Chicken Breast chunks (in water)
1 cucumber (I used 1 whole mini-cucumber) - slicked in small chunks
1/2 cup of light mayo (I prefer Best Foods)
16 Keebler Multi-Grain Club crackers (included in nutritional information)
Directions
Drain chicken, and with a fork, smash against colander to get out as much of the water as you can.
In a bowl, mix in 1/2 cup of mayo, drained chicken and slices of cucumber. Mix well and spoon mix on top of crackers*. For 4 servings, use only 4 crackers. If you're halving this recipe, you will need 8 crackers.
