Ingredients

    4 - 6 oz portions of boneless skinless chicken breast

    1 can of quartered artichoke hearts, drained

    1 can of tomatoes w/ green peppers & onions

    1/4 cup of Sun-Dried Tomato Pesto

    Salt & Pepper to taste

Directions

Brown seasoned chicken in non-fat cooking spray over medium-high heat. Remove and set aside. Pour into pan the tomatoes and cook for one minute over medium high heat to reduce. Add in pesto and artichokes and combine thoroughly. Add chicken and turn to coat. Cover, reduce heat to medium-low and simmer 20 minutes or until chicken is cooked through. Serve with brown rice or whole-wheat pasta.
