Introduction
This was my favorite family recipe when I was a kid. You can add any kind of vegetables you want and if you want to spice it up add some dried chili's and a little cayenne for some kick! Ingredients
-
Canned tomatoes, whole
1 pkg Lean Ground beef
1 onion
2 stalks celery
2 cloves garlic
3 tbsp extra virgin olive oil
8 - 10 mushrooms, quartered ( I would say approx a cup of quartered mushrooms)
1/2 - 1 tsp basil
1/2 - 1 tsp cilantro
1/2 - 1 tsp oregano
1/2 - 1 tsp dill weed
salt & pepper
Directions
Heat olive oil in large pot. Sautee garlic and onion until translucent then add beef. Brown beef until pinkness almost gone and add mushrooms and celery. Season with salt and pepper and add spices (I usually eyeball my spice amounts so add as much as you like!)
Let cook until celery has turned bright green and mushrooms are tender. Add canned tomatoes. I let it simmer for about 15 - 20 minutes. During that time cook macaroni.
Add macaroni after cooked and heat through for 5 -8 minutes.
Serve with side salad, crusty bread and a sprinkling of parmesan. Mmm.
