Ingredients
-
*1/2 cup to 3/4 cup flour
*4 Boneless chicken breast halves, no skin
*2 TBSP Butter
*1/2-3/4 cup beer (I use Sam Adams. Stick with a light-colored beer)
*1 tsp salt
*1/8 tsp ground black pepper
*1/4 tsp. dried Herbs de Provence
*2 Bay leaves
Directions
*Put the flour in a shallow plate. One piece at a time, dredge the chicken in the flour, coating both sides and shaking off any excess.
*Melt the butter in a large skillet over med-high heat. When it foams, add the chicken and cook until deep golden brown on both sides, 5-7 minutes per side. Transfer the chicken to the slow cooker. Add the beer to the skillet and bring to a boil, scraping up any browned bits stuck to the pan. Pour over the chicken. Sprinkle with salt, pepper and Herbs de Provence. Tuck the bay leaves in among the chicken pieces. Cover and cook on High for 3-4 hours.
* Preheat the over to 400 degrees. With a slotted spoon, transfer the chicken to a shallow baking dish. Discard the bay leaves. Pour any liquid remaining in the cooker over the chicken. Bake uncovered until lightly browned (About 20 min). Serve Immediately.
