Introduction

These are super tasty cookies! While the recipe calls for raisins, if I'm in the mood for chocolate, I'll substitute the raisins with chocolate chips! These are super tasty cookies! Ingredients

    1 1/8 c. Flour
    1/2 c. rolled oats, uncooked (not instant)
    1/4 tsp. salt
    1/4 tsp. baking soda
    1/2 c. butter (salted)
    1/4 c. granulated sugar
    1/2 c. brown sugar, packed
    1 egg, large
    1 tsp. vanilla extract
    1 tbsp. honey
    3/4 c. raisins

Directions

Preheat oven to 300 F. Combine flour, oats, salt, and baking soda in a bowl and mix thoroughly. Set aside. Combine softened butter and sugars in a bowl and mix with electric mixer at medium speed until a grainy paste forms (approx. 2 minutes). Add egg, vanilla, and honey, and mix at medium speed until mixture is light and fluffy. Add dry ingredients and raisins, and mix on low only enough to combine ingredients. Do not over mix! Scoop heaping teaspoons of cookie dough onto ungreased cookie sheet. Note: cookies do not really spread during baking, so size them appropriately when you're putting them on the cookie sheet. Bake for 18-22 minutes, until the tops are golden brown. Remove from oven, and move immediately to a flat, cool place to cool. Should make 24-30 cookies, depending on how you size them. Best enjoyed with a glass of milk!

    I thought these would be too sweet, not at all.The taste of the honey is really very nice. made about 27 very small cookies. They are worth the effort. - 4/22/20
