Ingredients

    * Eggplant, fresh, 2 cup, cubes (remove)
    * *Potato, raw, .5 large (3" to 4-1/4" dia.) (remove)
    * Tomato Sauce, .25 cup (remove)
    * Red Ripe Tomatoes, 2 large whole (3" dia) (remove)
    * Ginger Root, 1 tsp (remove)
    * Ginger Root, 1 tsp (remove)
    * *Hot Chili Peppers, .5 pepper (remove)
    * *Cumin seed, 1 tbsp (remove)
    * coriander powder, 1 tbsp (remove)
    * coriander powder, 1 tbsp (remove)
    * Salt, 1.5 tsp (remove)
    * Turmeric, ground, .5 tsp (remove)
    * Sunflower Oil, 1 tbsp (remove)

Directions

Add oil in a skillet, once hot add cumin seeds, let them sizzle, add then add the green chilis, the ginger and tomatoes + the tomatoe sauce, and all the SPices, for about 10 mins
Season with salt
cover and cook on medium flame till oil seperates, once oil seperates, add the brinjal + potatoes and some water and let it cook.
once the potatoes and brinjal are cooked, turn off the flame.
After adding the brinjal and potatoes, keep monitoring the gas so they dont get burnt

    Very tasty. Lacking the turmeric I substituted Marjoram ( I know, I know, not the same at all) but surprisingly it worked pretty well. The family loved it. - 5/20/11
