Introduction
There was one Midwestern friend who was a great cook. She shared many of her recipes with me and I worked them into our family dinners. This one has the great eclair taste, but in a torte so you can manage your serving size. There was one Midwestern friend who was a great cook. Ingredients

1 lb graham crackers
2 pckg instant low fat french vanilla pudding
3 3/4 cups 2% milk
8 or 9 oz. lite cool whip
TOPPING:
1 square unsweetened chocolate (OR semi-sweet)
1 tblsp Karo (white) syrup
3 tbsp butter
1 1/2 cup powdered sugar
2 tsp vanilla
2 tblsp fat free milk
Directions
Line the bottom of a 9x13 pan with whole graham crackers (DO NOT CRUSH).
Mix pudding, milk, and cool whip together.
Spread 1/2 pudding mixture over bottom layer of crackers. Put one more layer of whole graham crackers over pudding. Spread other half pudding mixture over crackers, then put on another layer of crackers.
Spread topping over last cracker layer.
TOPPING: Topping should not be thick like regular frosting, more like a glaze. Keep refrigerated. Set overnight.
