Ingredients

    Lean ground beef 5 ounces
    4 potatoes
    One bag of mixed frozen vegetables (spring mix)
    2 cans of italian style tomatoes
    1/4 cup skim Milk
    1/4 cup onion finely chopped
    1 cup cheddar cheese

Directions

Brown the beef and onion. Once the meat is browned, drain the fat. Add the vegetables and tomatoes. Cook for 5 minutes. Spread into 13x9 pan. Scrub and pierce the potatoes and microwave until done at least 6 minutes. Mash the potatoes with the milk and place on the beef mixture. Top with cheese and bake at 350 degree's for 15 to 20 minutes until the cheese is bubbly. Makes 8 servings.

    this wasn't very good, not moist at all - nothing compared to a traditional sheppards pie. i won't make this again - 3/22/11
