Introduction

I modified this recipe from an online recipe that had way too much pasta... i cut the pasta back to 1/2 cup and added more chicken broth. I also used ground pork instead of ground chicken for more flavour. Ingredients

    1 lb. ground pork
    1/2 cup breadcrumbs
    1 egg
    1/2 tsp each onion and garlic powder
    salt & pepper to taste
    8 cups chicken broth
    1/2 cup orzo or acini di pepe pasta
    1 10 oz pkg baby spinach

Directions

Mix ground pork, breadcrumbs, egg, and spices together and roll into tiny meatballs (I use a 1/2 tsp measuring spoon as a scoop to get the right size). Drop meatballs into boiling salted water for 6 minutes, then add to slow cooker. Add chicken broth and set slow cooker for 6-8 hours on low, or 3 hrs on high. Halfway through cooking add pasta and spinach.

Makes at least 10 servings... freezes well.
