Ingredients

    1 c. cooked Brown Rice
    .5c. Onions, finely chopped
    .5 c. Chicken Breast, finely chopped
    2 Eggs
    squiggle of Ketchup on top of finished egg

Directions

Saute onions until translucent in little oil. Add chicken until done. Add rice and toss until heated through. Add 2 tbsp of ketchup and mix well. Mound the rice on a plate. Make an omelet out of the eggs. One per person. Place on top of the rice and squiggle a little ketchup on top for garnish if desired.
