Introduction

My mom used to make tuna salad during Lent and this is my own version of it; I decreased the mayo and added some vegetables to make it healthier. To increase protein/fiber, you could also add a can of black beans, drained. I like to have it on toast or a pita. Ingredients

    Ingredients:


    Tuna, Canned in Water, 2 cans drained
    Hard Boiled Egg, 4 large
    Carrots, raw, 1 large grated
    Onions, raw, .5 large chopped
    Kraft Mayo Light Mayonnaise (Mayo), 4 tbsp
    Yellow Mustard, 2 Tbsp.
    *Pickles - Vlasic Sweet Midgets, 1 oz chopped


Directions

Combine all ingredients and mix well with fork. Refrigerate for at least an hour. Serves 6.
