Number of Servings: 6

Ingredients

    1 pkg Jennie-O Ground Turkey
    1 1/2 Pkg Old El Paso Reduced Sodium Taco Seeasoning
    1 Jar Organic Salsa (Nature's Promise)
    1 !/2 C Sargento Red Fat Mexican Blend Cheeses
    4 1/2 oz blue corn chips(wegmans)
    2 Bags Dole Classic Romaine Salad

    Additional Items if Desired:

    Raw Onion
    Avocado
    Chopped Tomato
    Plain No-Fat Yogurt or Sour Cream
    Roasted Red Peppers or Jalapeno Peppers
    Kidney or Black Beans

    Substitute Beans for the Chips if you want more fiber and less fat.

Directions

Serves 6:
Saute Ground Turkey Breast in saucepan coated with cooking spray on med-high heat. Break up turkey into small pieces, when all the pink is gone, add the 1 & 1/2 pkg taco seasoning with 1cup water - turn on low heat and cook 10 minutes.
Divide up 2 bags of Dole Classic Romaine Salad
onto 6 plates.
Top each salad with 3 TBS Salsa
Next add the 3.5 oz ground turkey
Next add 1/4 cup Mexican Cheese
Finish the top with 3/4 oz blue corn chips crumbled

Other additions if desired:
More Salad
Raw Onion
Avocado
Chopped Tomato
Plain No-Fat Yogurt or Fat Free Sour Cream
Roasted Red Peppers or Jalapeno Peppers
Kidney or Black Beans
This is any easy dinner with leftovers for lunch.

Serves 1:
Cook up the turkey and taco seasoning as above.

To one plate add:
3 cups salad
3 - 4 oz ground turkey
1/4 cup red fat mexican cheese
3 TBS Salsa or more
3/4 oz blue corn chips or leave off the chips and add 1/3 c drained and rinsed black beans or kidney beans for about the same calories but an increase in fiber and less fat.

    This was a huge hit at my house. All of the boys ate it up. They didn't even mind that all they had for dinner was a "salad" because it was very filling. It was easy to customize for each person's tastes also. I will make this again. It is good and so easy to make. - 6/19/08
