Introduction

Quiche with a Kick Quiche with a Kick
Number of Servings: 8

Ingredients

    2 frozen deep dish pie crusts
    5 eggs
    1 cup of milk
    1 can of rotel tomatoes with green chilis
    2 tablespoons of green chili sauce (or other hot sauce)
    2 cups of forzen yellow corn
    1 medium size onion, diced
    1/2 cup of Shredded Cheese
    3 cups Ham, diced
    1 Tablespoon of Flour
    Salt and Pepper to tase

Directions

Preheat the oven at 450.

Let the pie crust begin to thaw - once thawed, prick with a fork. Place the pie crusts into the preheated oven to brown. Let brown for 5 minutes and then set aside.

Reset oven to 350 degrees.

In a large skillet, mix the onion, ham, and corn. Cook until onions are cooked to preference.

In a large mixing bowl, combine the 5 eggs and milk. Add the can of RoTel and chili sauce. Mix well. Add the flour, salt, and pepper and mix. Add the skillet items to bowl and mix. Add cheese and mix well.

Pour into the browned pie crusts - try to split the ingredients evenly. Place in oven and bake for 35 minutes or until a knife comes out clean from the centers.

Let cool for 10 minutes.

Makes 8 quarter pie servings.
