Ingredients

12oz ground beef (lean)
2 c elbow macaroni
2 c grated cheddar cheese
1 c diced tomatoes
1 c chopped onions
1/2 c green bell peppers
1 tbsp margarine or butter
1 tbsp oregano
1 tbsp ground cumin
1 can tomato sauce
Add salt and pepper for extra taste
Directions
Preheat oven to 350F
Cook macaroni according to package and drain.
In a skillet, saute onions and peppers and tomatoes in the butter (not a lot, just enough to get the juices cooking) until soft.
Remove and set aside.
Brown hamburger and drain, then mix with sauted vegetables and spices. Mix with the pasta, pour into greased 9 x 13 cooking pan.
Heat in oven for 5 minutes, add the cheese over the top, and bake again until the cheese melts and the dish is bubbly.
Let set for 5 minutes before cutting into 12 equal servings.
