a simple chickpea salad I whipped up to take with me to work for lunch. a simple chickpea salad I whipped up to take with me to work for lunch.
Number of Servings: 7


    1 can of chickpeas, drained
    1 can of black olives, sliced
    1 can of tomatoes (could certainly use fresh instead)
    1 container of feta cheese (appx 1.25 cups)
    1/2 cucumber, diced
    4 medium celery stalks, diced
    1/2 red onion, minced
    minced garlic or garlic salt (optional)


pour chickpeas, olives and tomatoes into a strainer, rinse them and set aside. Dice celery and cucumbers, mince red onion and garlic; combine. Pour both mixtures together and mix, then put in container of feta cheese, gently mix until all ingredients are even throughout. Eat as is or put into wraps!

makes 7 1-cup servings.
