Introduction

I love plantains and this is a good way to eat them without resorting to frying them. I love plantains and this is a good way to eat them without resorting to frying them.
Number of Servings: 8

Ingredients

    2 tbs olive oil
    2 cloves or garlic, minced
    0.5 cup onion, chopped
    1 can black beans (Bush's)
    1 can refried black beans (Roserita)
    2 plantains, blackened and chopped
    Corn tortillas

Directions

Saute garlic and onions in olive oil in a pot.

Add both cans of beans (two can's Bush's can be used if one is completely drained).

When beans are almost done, add plantains.

Mix and heat throughly.

Put on tortillas and enjoy!
