Introduction

Easy and very tastey. I'm not a fish fan but this is good! I like to serve with steamed whole grain brown rice and broccoli. I add a tablespoon of fat free tartar sauce to the top of each patty after cooking. The stated nutritional intake does not include the rice, broccoli, or tartar sauce. Easy and very tastey. Ingredients

    3 - 6oz. cans pink salmon, boneless, skinless, in water;
    3/4 cup finely diced onion
    2 egg whites
    1/2 cup flour
    1 tsp. basil
    1/2 Tbsp. parsley
    1 tsp. terragon
    1 tsp. cumin
    1 tsp. thyme
    1 Tbsp. extra virgin olive oil

Directions

Makes 5 generous sized patties.
Drain salmon and mix with onion, egg whites, flour, basil, parsley, terragon, cumin, and thyme. Let the mixture "rest" for about 5 minutes in the refrigerator. Form 5 patties.
Heat olive oil in a nonstick skillet over low medium heat. Add salmon patties to heated oil. Cover pan and cook slowly for about 10 - 12 minutes until pan-side of pattie is light brown. Turn the patties carefully, and continue to cook over low medium heat until light brown. Makes 5 generous sized salmon patties.
