These pancakes are loaded with fiber and protein, and are quite filling and satisfying. You get a serving of fruit with each portion. They are delicious when topped with 1/2 cup of berry compote and some toasted pecans. They're great not just for breakfast, but for anytime! Ingredients

    2 bananas, sliced
    3/4 cup water
    1 egg
    1 T vegetable oil
    3 scoops protein powder
    3/4 cup Hodgson Mill buckwheat pancake mix

Directions

Add the banana, water, egg, and oil to a food processor or blender, and blend thoroughly. Transfer to mixing bowl. Add protein powder, and whisk; then add pancake mix and whisk just until the mixture is thoroughly mixed together. Heat a nonstick skillet until hot on medium high, pour about 1/2 cup pancake mix for each pancake, and cook on each side for about 2-3 minutes. Watch carefully; they burn easily. They are easier to flip when made as small dollar pancakes.

    I make a very similar recipe to this using the buckwheat pancake mix. I use milk instead of water, only one banana, and I use walnuts. (no protein powder) Top it with some yummy Cary's Sugar Free Syrup! These keep me going all morning long! Best breakfast dish ever! :) - 3/31/10
