Ingredients

1. 6 to 7 medium white potatoes, peeled and cut into bite size pieces
2. Enough water to cover potatoes in large soup pot
3. 2 medium stalks celery, cut into bite size pieces -- more or less to taste
4. 1/2 medium onion, chopped
5. 1 Tbs. Smart Balance 67% Buttery Spread
6. 1/2 cup fat free or 2% milk -- calories based on 2% milk
7. 1/4 tsp. cayenne pepper or, more or less to taste
7. Fresh ground black pepper to taste
8. Large soup pot or dutch oven
Directions
Makes about 6 1 cup servings.
Cut potatoes into bite size pieces or desired size. chop celery and onion. Place all 3 ingredients in large soup pot and cover with water. I usually only barely cover ingredients with water. Add 1 Tbs. Smart Balance and bring to strong boil. Reduce heat and add 1/2 C. milk and cayenne and black pepper. simmer for about 1 hour or until potatoes are soft. Mash soup with potato masher, but not thoroughly, leave some chunks. Serve hot.
