Introduction

This is one of my favorite varieties of chicken salad that I like to make ... it is quick and easy to pack off for lunch This is one of my favorite varieties of chicken salad that I like to make ... it is quick and easy to pack off for lunch
Number of Servings: 6

Ingredients

    3- Boneless skinless chicken breast
    1/4 cup each dried cranberries and walnuts
    2 celery stalks
    1 medium slice of red onion
    1 Tblsp Mayo


Directions

I boil the chicken with a dash of EVOO
set aside to cool when fully cooked
dice up the celery and onion
chop the nuts and add cranberries
dice cooled fully cooked chicken
mix all in a bowl add 1 Tblsp of Mayo to bind
I like to serve on Triscuts or make lettuce wraps with but if you have a few extra calories to burn it is very yummy as filling for a grilled cheese sandwich (you will need to put the chicken salad in a food processor)
