Introduction

I adapted this recipe for my husband. The original recipe calls for 2 potatoes & 3 drained cans of corn. I adapted this recipe for my husband. The original recipe calls for 2 potatoes & 3 drained cans of corn.

Ingredients

    2 lb. lean pork loin, cubed
    12 raw new potatoes (or 6 Irish potatoes), cubed
    2 TB flour
    1 TB oil
    4 cups chicken broth
    3 cans (4 oz. each) diced green chilis
    2 large stalks of celery, chopped
    1 can (about 2 cups) diced or stewed tomatoes
    2 tsp cumin
    1 tsp oregano

Directions

1. Toss the cubed pork in the flour to coat.
2. Lightly brown the pork in hot olive oil
3. Add all other ingredients. Bring to a slow boil, then cut the heat back to a simmer. Cook 50 minutes to 1 hour (until meat & veggies are tender).

You could serve this over rice or with tortillas on the side, but it's filling by itself as well.
