Introduction

EXCEPTIONALLY GOOD in the opinion of Steve and I! Good for use with leftover Thanksgiving turkey. But, also good in summer with chicken (for picnics, luncheons, showers, etc.) I use other kinds of bread for lighter calories. Ingredients

    1 c. diced cooked turkey or chicken (can used fresh, canned, deli, etc. I like fresh best.)
    2/3 c. chopped peeled apple
    1 celery rib, finely chopped
    1/2 c. chopped walnuts, toasted
    1/4 c. regular or golden raisins
    (Try with fresh grapes, or dried
    cranberries, blueberries, too.)
    1/3 c. vanilla yogurt
    1/3 c. mayonnaise
    1 t. minced fresh tarragon or 1/2 t. dried tarragon
    1/2 to 1 tsp. grated orange peel
    1/8 t. salt
    Dash pepper
    4 sandwich rolls, split (I ate it with low cal. tortilla and it was dry. Will use plain bread next time. I put Ezekiel English Muffins down on recipe because that's what I use for Steve. But, they are much higher in calories.

Directions

In a bowl, combine the turkey, apple, celery, walnuts and raisins. Combine the yogurt, mayonnaise, tarragon, orange peel, salt and pepper; spoon over turkey mixture and stir to coat. Spoon 1/2 cup onto each piece of bread. Yield: 4 servings.
