Ingredients

    4 Cup Low Fat Chicken Broth
    1 Pound Lean Ham
    4 Half Chicken Breasts (boneless/skinless)
    1/4 Cup Soy Sauce
    3 Tablespoons Cooking Wine
    6 Dried Medium Shitake Mushrooms
    3 Pounds Winter Melon
    1 Teaspoon Powdered Ginger
    Black Pepper To Taste

Directions

Boil chicken breasts til done, about 20 minutes. Shred cooled chicken.
Peel and cut winter melon into chunks
Soak shitake mushrooms to rehydrate; remove stem and cut into strips.
Cut ham into cubes.
Put all ingredients into a large pot and simmer about 30 minutes to 1 hour.
Makes about 8 - 1.5 cup servings
