Ingredients

    1 cup sliced green onions
    1/2 cup chopped green sweet pepper
    1/2 cup chopped celery
    1/2 cup snipped fresh parsley
    1 10-oz pkg. frozen chopped spinach, thawed and well drained
    1/2 cup butter
    1/2 cup fine dry bread crumbs
    1 pint shucked oysters, drained and chopped
    1 small clove garlic, minced
    Several dashes bottled hot peper sauce
    1/4 tsp. salt
    1/4 tsp. pepper
    Toast points or melba rounds

Directions

1. Cook and stir the onions, sweet pepper, celery, parsley, and spinach in the hot butter over medium heat for 5 minutes. Add the bread crumbs, oysters, garlic, hot sauce, salt, and pepper. Cook and stir 5 minutes more or until oysters are cooked through. Serve warm with toast points or melba rounds.
