Ingredients

    Chicken breast, no skin, 1 breast, bone and skin removed, sliced thin
    1 tbsp Lime Juice
    2 tbsp Soy Sauce
    2 tsp brown sugar, unpacked
    2 tbsp water
    1 1/3 cup mixed vegetables, frozen
    1 peppers, sweet, red, fresh, chopped
    1 onion, raw, medium, chopped
    1. 5 cups Brown Rice, long grain

Directions

Combine Lime Juice, Soy Sauce, Brown Sugar and Water to make a marinade for thinly sliced chicken - allow to sit in fridge for at least an hour. Allow frozen veggies to slightly thaw.

Begin cooking rice.

Remove chicken from marinade and cook in medium sauce pan, when cooked through, add frozen veggies, chopped red pepper, chopped onion, and reserved marinade. Allow to cook for 10 minutes.

Serve with brown rice.

    Incredible!
    This was a great meal that my entire family enjoyed. We added the rice to the chicken and vegetables for a one dish meal that was easy to make and easy to clean up. We'll have it again! - 4/14/09
