You can double this recipe and it still works. Very yummy and nice with butter but that would be naughty!!

Ingredients

    4 Weetbix
    3 Tbsp butter
    1 Tsp baking soda
    1 Egg, beaten
    1 cup sugar
    1 Cup dates
    1 Cup boiling water
    1 Cup self raising flour

Directions

Crush weetbix, add sugar, butter, dates and baking soda.
Pour over water
Stand 5 mins
Stir to blend and add egg, flour and mix well
Pour onto loaf tin and bake 1 hour, moderate oven.
