Introduction
I was looking for something to do with some left over squash one day and found these muffins on a recipe site online. I made some modifications and they came out moist and yummy! Take the chocolate out and add some nuts, or berries and it would probably still be great. I'm sure this recipe would work for any kind of squash or pumpkin. It makes 18 large muffins with a calorie count that you wont be able to complain about! Ingredients

3 cups all-purpose flour (I used whole wheat and white mix)
0.5 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1 cup milk
1 cup pureed cooked winter squash
1/4 cup butter or margarine, softened
3/4 cup of unsweetened Apple sauce
2 eggs, lightly beaten
Directions
In a large bowl, combine first six ingredients; mix well. In a separate bowl, combine milk, squash, butter and eggs; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups about two-thirds full. Bake at 350 degrees F for 20-22 minutes.
