Introduction

Dice chicken in bite sized pieces and cook thoroughly. Spray nonstick cooking spray on one side of 2 tortillas and place that side down on a cookie sheet. Combine diced cooked chicken, salsa and cheese in a bowl. Spread mixture on tortillas. Top with remaining tortillas. Bake 16-18 minutes at 350 degrees.     Good basic quick easy go-to recipe. I added corn and black beans for a southwestern flavor. The calorie count is based on 1/4 of a quesadilla being a serving, which is pretty small unless it's an appetizer. One whole quesadilla is a more realistic serving size. I eat 1 quesadilla w/veggie salad. - 7/25/09

    This was very good scored big with my picky little eaters and I made some spanish rice for the fam and ate some field corn with my dish. They loved it! I made enough for leftovers and I ate 2 serving with some organic black bean soup for lunch. - 7/25/09
