Introduction

Mildly tweaked by omitting olive oil and mozzerella, adding more black olives, as well as a jar of mushrooms. Mildly tweaked by omitting olive oil and mozzerella, adding more black olives, as well as a jar of mushrooms.

Ingredients

    4 chicken breasts
    1 14.5 oz can Italian diced tomatoes
    1 14.5 oz can large black olives
    2 tbsp flour
    spray olive oil

Directions

Lightly flour chicken breasts with 2 tbsp flour.
In skillet coated with spray olive oil, cook chicken breast. When chicken is almost done, add all other ingredients in skillet. Simmer for 15-20 min.
Great with couscous (couscous not included in calorie count).

Makes four generous servings.
