Ingredients
-
For the Fish
.75 lbs tilapia
2 Tbsp lime juice
1/2 tsp paprika
1/4 tsp salt
1/2 tsp ground black pepper
1/2 tsp chili powder
For the Burritos
3 whole wheat flour tortillas
1/4 cup salsa
3/4 cup shredded cabbage
Directions
Place the fish in a shallow baking dish. Sprinkle with the lime juice, paprika, salt, pepper, and chili powder. Cover, refrigerate, and allow to marinate for about 30 minutes.
Preheat grill to medium-high (or oven to 375 degrees F).
Lightly coat a 24x12-inch piece of aluminum foil with cooking oil spray. Place the fish in a single layer, in the center of the foil. Close the foil over to seal in the fish, folding the ends upward.
Place the foil packet on the preheated grill (or in the preheated oven). Cook for about 7-10 minutes, or until the fish is opaque. Remove from grill (or oven).
To assemble burritos: Wrap tortillas in foil and place on the grill (or oven) to warm for about 2 minutes. Top with fish. Sprinkle with salsa and cabbage. Repeat for remaining burrito.
**You can add other ingredients (avocado, cheese, sour cream, etc.) but they are not calculated in the nutritional value.
Makes 3 burritos.
