Ingredients

    1lb asparagus
    5 cups chicken broth
    2 Tbsp extra virgin olive oil
    1onion chopped and 4 garlic cloves chopped
    1 1/2 cups barley
    1 cup dry white wine
    sea satl and freshly gound pepper to taste
    3/4 cup grated parmesan cheese

Directions

warm the broth in a saucepan over low heat. In a large saute pan, heat the oil over medium high heat and saute the onion and garlic. Adde the barley and cook, stirring constantly for 2-3 minutes. Add the wine and cook until the liquid is absorbed. Add the broth, about 1/2 cup at a time, stirring occasionaly and waiting until the liquid is absorbed before adding more.

Meanwhile, in a saute pan saute the asparagus until dark green and slighly tender.
