Introduction

Ingredients

    1 pineapple, peeled, cored, and cut into 1" rings
    1 tsp. olive oil
    1 bulb fennel, diced
    1 red onion, diced
    1-2 jalapeno peppers, diced (for hot salsa--may be omitted if you prefer milder salsa)
    2 limes, juiced
    1 T. grated ginger
    2 cloves garlic, minced
    1/4 tsp. salt (optional)
    1/2 bunch cilantro, roughly chopped (can also use thai basil if you really like a strong anise flavor)

Directions

Heat a heavy cast iron skillet over medium heat till hot. Brush pineapple rings with olive oil and grill on each side till spotty brown and caramelized (about 5 mintues total). Remove from pan and cool till you can handle them, then dice into 1/2" chuncks.


Cominbe pineapple with remaining ingredients and mix well. Taste and adjust seasonings (if not useing jalapenos, you'll probably want to add some black pepper).


Let salsa sit for a bit to meld flavors (if you have time--it's good fresh, too, though).
