Introduction
A great English muffin - and yes, it's gluten free too!! A great English muffin - and yes, it's gluten free too!!Number of Servings: 6
Ingredients

1 3/4 - 2 cups rice flour*
2 tsp dry yeast
1 tsp guar gum (or Xanthan gum)
1 cup lukewarm water
1/2 tsp salt
1 egg, room temperature
1 Tbs sugar, divided
3 Tbs butter, melted
Directions
Preheat oven to 375 degrees.
Grease 6 muffin rings or whatever you're using and place on greased baking sheet. (Can use the jumbo muffin pans)
Mix 1 tsp of the sugar with the warm water and yeast.
Allow to rest about 10 minutes.
Mix all dry ingredients with yeast mixture, egg and butter.
Mix till smooth.
Drop into rings and spread out as best you can.
Let rise in warm place until double in size.
Bake for 18-20 minutes.
When cool, split with a fork to get all those delightful nooks & crannies!
Makes 6 servings. (1 English muffin = 1 serving)
* Note: I only use rice flour obtained from an Asian market, as it is more finely ground and does not leave a gritty/grainy texture. Any gluten-free flour blend should work well in this recipe!
