These are so good - you eat the skin and all - they are crunchy, chewy, and very satifying. I have modified the recipe for cooking just 1 sweet potato, which is supposed to be 1 serving, but it actually serves 2 pretty nicely so nutritional info is based on 2 servings. Ingredients

    1/8 cup all purpose flour
    1/4 teaspoon salt
    1/8 teaspoon black pepper
    1/3 cup grate Parmesan cheese
    1 small sweet potato (about 8 oz - scrubbed and cut into 8 pcs lengthwise)

Directions

1. Preheat oven to 425. Line a baking sheet with foil and set aside.

2. In a shallow bowl, stir together the flour, salt, and pepper. In a separate shallow bowl, lightly beat the egg white with 1 Tablespoon water until combined. Place the Parmesan cheese in another shallow bowl.

3. Dip the sweet potato first in the flour mixture, shaking off the excess. Then dip each wedge into the egg white mixture until coated. Finally, dip the sweet potato in the Parmesan, coating completely. Transfer potato wedges onto the prepared baking sheet as you go.

4. Bake until tender and crisp, abt 20-25 minutes. Serve sprinkled with more salt and pepper if desired.
