Introduction

Very tasty dinner, great with garlic bread! Very tasty dinner, great with garlic bread!
Number of Servings: 4

Ingredients

    1/2 C Flour
    2 eggs, lightly beaten
    2 chicken breasts, halved
    1/4 C Parmesan cheese
    1/4 C bread crumbs
    1 T butter, melted
    1 14.5 oz can diced tomatoes w/ garlic, drained
    3 T fresh or dried basil leaves minced
    1/4 t pepper

Directions

Preheat oven to 375 degrees F. Place flour and eggs in seperate shallow bowls. Dip chicken in flour, then eggs, place on baking stone (spray with Pam first). In a small bowl, combine Parmesan cheese, bread crumbs and butter. Sprinkle over chicken. Bake for 20 minutes. Meanwhile, combine the remaining ingrediants in the mixing bowl. Spoon mixture over cooked chicken. Return to the oven for 10 more minutes until heated throughout.

Makes 4 servings.
