This is a recipe an Indian friend of mine showed me how to make. It is super easy to make and pairs well with rice for a simple, inexpensive, yet flavorful meal. Ingredients

1 cup red lentils (dal), picked through and rinsed
2.5 cups water
2 tbsp oil
1/4 tsp black mustard seeds
1/4 tsp cumin seeds
1 tsp crushed garlic
1 tsp minced ginger
5 or 6 green curry leaves
2 or 3 slit green chilies (remove the seeds if you don't like really hot food)
3 tomatoes, chopped or canned equivalent
Directions
Pressure cook the lentils with the water for 8-10 minutes on high pressure. Let the pressure come down naturally. Mash the cooked lentils in the pot with a potato masher.
Heat the oil in a saute pan and add everything except the tomatoes. Saute until the mustard seeds pop - 2-3 minutes. Add the tomatoes and cook until soft. Add the lentils to the tomato mixture stir. Add water or cook longer to achieve the desired consistency
