Introduction

Ingredients

    1 lb ground chicken breast
    1 cup diced celery
    1 clove garlic, minced
    1/2 cup minced onion
    1 can reduced fat cream of chicken soup
    1 chicken bouillon cube (1tsp granules)
    1/2 tsp cumin
    1 cup of water
    6oz of beer (your choice - I use Sam Adams light)
    1 can of white beans (navy or great northern)
    1 can chopped green chilies
    1/2 cup serrano pepper, chopped
    1/2 cup jalepeno pepper, sliced
    1 pasilla pepper, chopped
    1/2 cup reduced fat sour cream
    1/2 cup 2% mexican shredded cheese

Directions

Brown ground chicken
Saute celery, onions, garlic and peppers
Mix together remaining ingredients (except sour cream and cheese) in a large stock pot and bring to a boil
Simmer for 1 hour.
Just before serving, add sour cream and heat until warm.
Sprinkle with shredded cheese

Makes 8 - 1 cup servings
