Introduction

This is brocolli cornbread.... very filling and yummy. Modification could be made to make it healthier, such as sub. cheddar for more lowfat cottage cheese and eliminating the butter or substituting whole milk for skim. I have the Down Home with the Neely's original recipe. This is brocolli cornbread.... very filling and yummy. Modification could be made to make it healthier, such as sub. cheddar for more lowfat cottage cheese and eliminating the butter or substituting whole milk for skim. Ingredients

    1 pkg cornbread muffin mix (size of 18 Tbsp.)
    3 Tbsp. unsalted butter
    5 oz of frozen brocolli (unthawed)
    4 oz cottage cheese
    1/2 diced onion (diced)
    1/2 Tbsp. salt
    2 eggs
    1/4 cup whole milk
    1 clove garlic (minced)
    6 oz cheddar cheese

Directions

In a cast iron skillet, melt butter and add onion and brocolli cooking a few minutes until tender. Mix all remaining ingredients and bake in a preheated oven for 30-35 minutes at 350 degrees.
