Introduction

an aromatic hearty soup. an aromatic hearty soup.
Number of Servings: 8

Ingredients

    t tbs olive oil
    1 large onion, sliced
    1tbs chopped garlic
    1sprig of fresh time
    1 pound fresh assorted mushrooms. I like Shitake and portabello.
    1oz dried chanterelle mushrooms
    1.5 cups boiling water
    3 10.5 oz cans of low sodium beef broth
    1/2 cup half and half

Directions

Start by adding the boiling water to over the dried chanterelles in a bowl, and allow to soak for about an hour. sweat the onion and garlic in olive oil until translucent. Add the mushrooms and cook until they have shrank down to about half their size. added the broth and soaked chanterelles with their soaking liquid. simmer for about 10 mins, and add the half and half. I like to serve with crusty bread and cheese on the side.

Serves 8

Note: The nutrition was based on regular beef broth, so if you use low sodium beef broth, it would be less then calculated.
