Ingredients

    4 boneless skinless chicken breast
    1 T olive oil
    3 cloves minced garlic
    1 8-10oz bag baby spinach
    1/2 cup canned tomatoes
    2 T balsamic vinegar
    salt and pepper to taste

Directions

In saute pan, heat olive oil. Season chicken with salt and pepper. Add garlic and chicken breasts. Brown 6 minutes on each side. When chicken is done, remove from skillet. To skillet, add bag of fresh spinach and let cooks 3 minutes til slightly wilted. Remove from pan. Add balsamic vinegar and tomatoes to pan and deglaze for 3 minutes. To serve, mound brown rice, orzo, couscous or quinoa in server plate. Top with spinach then chicken then sauce over top.
