Introduction

This is a quick and easy recipe I kind of made up as I went along. We never have leftovers when I serve this. This is a quick and easy recipe I kind of made up as I went along. We never have leftovers when I serve this.
Number of Servings: 4

Ingredients

    1 lb chicken breast no skin, sliced
    1 12 oz can yellow corn
    1 12 oz can black beans, rinsed
    1 10.75 oz can tomatoe soup
    4 cups of rice

Directions

Cook chicken until opaque about 5 mins in a pan covered with cooking spray. Sprinkle with garlic salt or just plain garlic if desired
Add all of the canned ingredients and mix together
Stir often and cook for an additional 10-15 mins
Serve over cooked rice.
I like to add condiments such as salsa or sour cream. My family loves this meal. It is quick and easy. My vegetarian daughter liked this also, I just mixed the ingredients together before adding to the chicken.

    can you say...AMAZING!!! what a fantastic dinner this is! I think next time I will try using taco or fajita seasoning instead of the garlic and add a bag of fresh spinach. Thanks! - 4/18/10
